Certified organic means the coffee is grown without synthetic pesticides or herbicides, and an accredited auditor verifies it every year. Ethiopia Kayon and Peru Palto carry that certificate. The Malaysian Liberica and the Colombian lots are grown without synthetic inputs, by their farms' account, and hold no certificate, so we do not call them organic.
