Two or three origins, brewed side by side, make the case for single origin better than any line on a bag. Brew them in order. Take notes.
We build sets the way we would brew them. Open one, brew in order, and the differences come up by themselves.
Ethiopia Kayon and Peru Palto carry a published laboratory report: ochratoxin A and aflatoxins B1, B2, G1 and G2, screened on the green bean at independent laboratories accredited to ISO/IEC 17025, before roasting. Each set's page says which of its coffees carry one. Every bag in every set is traceable to one farm, one lot, one harvest.
An occasional note on origin, roast, and the work behind the bag. Sent rarely. Read slowly.
