Washed, natural, honey: how process shapes the cup
Process is what happens to the coffee cherry after picking and before it dries. Washed removes all the fruit, for a clean, bright cup. Natural dries the cherry whole, for heavier, fruit-forward flavours. Honey sits between the two. The same bean, processed three ways, can taste like three different coffees.
Country and varietal get most of the attention. Process quietly does more of the work.
Washed
The fruit is stripped from the seed before drying, usually with water. What is left is the bean and very little else. The result is a clean, transparent cup that lets the origin speak without interruption. Most washed Ethiopians taste of citrus and florals for exactly this reason. It is the most forgiving process to produce, and the most common.
Natural
The cherry is dried whole, the seed left to steep in its own sugars under the sun. This asks for dry weather and constant attention; mishandled, it ferments the wrong way. Handled well, it gives the heaviest body and the most fruit, berries and stone fruit and sometimes something close to wine. When a natural works, it is unmistakable.
Honey
Some of the fruit is removed, some left clinging to the seed as it dries. The name comes from the tacky surface, not the flavour. It is a middle path: much of the sweetness of a natural, much of the clarity of a washed. Less common, because it is fussier than either.
Why it matters when you choose
Process tells you more about how a coffee will taste than the country on the bag does. A washed and a natural from the same farm are two different drinks. Every coffee we carry lists its process, so you can read the cup before you brew it.

Which process is best?
None. It is preference. Reach for washed when you want clarity, natural when you want fruit and body, honey when you want both.
Does process change the caffeine?
Negligibly. Caffeine is set by the bean and the species, not by how the cherry was dried.
Is one process cleaner or safer?
Process is about flavour, not safety.
Safety is a separate question, settled by testing, whatever the process.
