Why we roast to order

Roasting to order means we roast after the order, not for a warehouse. The reason is simple. Coffee is best young, and freshness is a date.

Roasting to order means we roast coffee after you buy it, not weeks ahead for a shelf. Roasted coffee is at its best in the weeks just after roasting, then slowly fades as it loses aroma to the air. By roasting close to the moment you order, we send the coffee while it is still young, and we print the roast date so you can see it.

What the phrase means

Some coffee is roasted in large runs, bagged, and sent to a warehouse to wait. It might sit for weeks or months before it reaches a shelf, and longer before it reaches you. By the time it does, the best of it has quietly gone.

We work the other way. The order comes in. Then we roast. The coffee leaves us close to the day it was made.

Why timing matters

Roasted coffee is not stable. From the moment it leaves the roaster it begins to release the volatile compounds that carry aroma and flavour. There is a short settling window in the first days, then a stretch of weeks where the coffee is at its most expressive, and then a slow decline. None of this is dramatic. Old coffee is not unsafe. It is just less of itself. Flatter. Quieter where it should sing.

The roast date, in plain sight

Every bag carries the date it was roasted. Not a best-before guess. The actual day. We would rather give you the fact and let you judge than ask you to trust a vague promise of freshness. A date is honest. You can count from it.

Once the bag is open, your part begins. Whole beans, sealed and away from light and heat, ground only when you brew. Storage protects what roasting to order delivers.

What it costs, and why we accept it

Roasting to order is slower. It means smaller batches, a little more waiting, no wall of stock ready to ship the instant you click. We accept that. The alternative is sending you coffee past its best so that we can move faster, and that is not a trade we are willing to make. The point was never speed. It was the cup.
